CORN FLOUR TORTILLAS, MADE FROM NATURAL GRAINS: SPECIALISTS. (EXCÉLSIOR ONLINE )
Corn tortillas are a fundamental part of Mexican cuisine and are recognized worldwide for their nutritional content. However, some still have doubts about which type of tortilla is better or more nutritious—the one made with nixtamalized corn flour or the traditional corn dough. The difference lies mainly in their quality controls. Nixtamalized corn flour is made by companies that must comply with strict sanitary standards, and add vitamins and minerals to their products during their manufacturing processes, so even tortillas made with corn flour tend to offer increased nutritional options for the human body. In this regard, the Gruma website notes that the origin of the name of its global brand, Maseca, comes from this process and the combination of the words “mas” and “seca,” meaning drier in Spanish; that is, drier or dehydrated dough. Gruma is the world’s leading company producing nixtamalized corn flour, tortillas and wraps. It is worth noting that, since its origin, in 1949, Maseca,a subsidiary of the Mexican company Gruma, has maintained the nixtamalization process in the preparation of its corn flour, adding folic acid, iron, zinc, vitamins and minerals over time, while maintaining its traditional nixtamalization process.

CORN TORTILLAS, A NUTRITION ALLY FOR OLDER ADULTS. (CENTRO ONLINE (PUEBLA) )
It is well-known that the calcium in tortillas improves digestion, controls cholesterol levels, reduces the risk of cancer, and even strengthens the gums of older adults. The nutritional needs of older adults are very similar to those of newborns, so it is essential to look for foods that provide the nutrients required for their daily diets, such as corn tortillas, said Araceli Martínez Coronado, a nutritionist certified by the Mexican Association of Nutritionists. She mentioned the different varieties of tortillas on the market, including those made with corn flour, nixtamalized such as Maseca or Minsa, which are fortified with vitamins B1, B2 and B3, A, C, D, and E, which help people improve their memory, maintain healthy eyesight and an overall stronger immune system.

I have said that the rising cost of raw materials will put pressure, especially on companies in the food sector, putting their business management skills to the test. In this context, a Mexican firm with a global reach that managed to succeed is Gruma, chaired by Juan González, which, as you know, is a leader in the production of corn flour and tortillas. In the first quarter of the year, Gruma continued to improve its profitability despite higher costs, with the price of corn being the indicator to watch out for, in addition to certain labor costs. Over the past few years,Gruma has consolidated a global power that has allowed it to improve its numbers in 2022 in markets such as the United States and Europe, especially notable in the latter due to the impact of the Russian invasion of Ukraine on various economies in the region.
